Ingredients

  • 1/2

    lb. green beans

  • 1/2

    lb. yellow beans

  • sea salt

  • 1/4

    cup olive oil

  • 1

    tbsp. fresh lemon juice

  • 1

    tsp. fresh thyme

  • freshly ground black pepper

  • 1/2

    cup chopped toasted walnuts

  • 1/4

    cup crumbled goat cheese

Directions

Clean and trim the beans. Blanch them in a pot of heavily salted water, then shock them in cold water and set aside. In a large bowl, combine the olive oil, lemon juice, and thyme with a pinch of sea salt and freshly ground pepper. Toss the beans in the dressing and sprinkle with the toasted walnuts and crumbled goat cheese. Toss again and serve immediately.
