Asparagus Tomato Salad

Ingredients

  • 1 lb fresh asparagus,trimmed and cut into 1in pieces
  • 1 small zucchini, halved and cut into 1/4 slices
  • 1 cup grape or cherry tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup minced fresh parsley
  • 3 Tbs olive oil
  • 2 Tbs red wine vinegar
  • 1 garlic clove, minced
  • 1/4 tsp seasoned salt
  • 1/4 tsp Dijon mustard
  • 1/4 cup shredded parm cheese, optional
  • 2 Tbs sunflower seeds, optional

Preparation

Step 1

Place the asparagus and zucchini in a steamer basket; steam for 2min. Rinse in cold water.
In a large bowl, combine the asparagus, zucchini, tomato, onions and parsley.
In a small bowl, whisk the oil, garlic, vinegar, seasoned salt and mustard. Pour over asparagus mixture and toss to coat. Sprinkle with cheese and sunflower seeds if desired.
