Apple and Brie Panini

Ingredients

  • 8 slices (1/2-inch) country bread, such as batard
  • olive oil for brushing
  • 4 ounces brie, sliced thinly
  • 1 Granny Smith apple, cored and sliced thinly
  • freshly ground black pepper

Preparation

Step 1

Preheat a panini press according to manufacturer's instructions. Brush one side of each bread slice lightly with olive oil. Place 4 of the bread slices oiled side down onto a work surface, and then place slices of brie on the bread, then layer with apple slices and season with pepper. Top with the remaining 4 bread slices, oiled side up. Place the sandwiches on the panini press and cook until the sandwich is hot, the bread is golden brown and the cheese is melting. Cut each sandwich in half and serve immediately.

Note: These can be cooked in a griddle type pan, be sure to use a heavy item such as a heat-proof press over the top of them while cooking.
