Baby Leek and Blue Cheese au Gratin

Ingredients

  • 175 g baby leeks, washed and trimmed
  • 3 x 15ml Tbspns veg stock
  • 40 g stilton cheese, crumbled
  • 15 g fresh white bread crumbs
  • 25 g chopped hazelnuts
  • alt, pepper,
  • 1/2 Tbspn chopped parsley

Preparation

Step 1

Arrange leeks in oven-proof dish, pour over stock, cover and bake in prep oven at 190C for 15 min.

Mix remaining ingredients, sprinkle over leeks and bake uncovered for a further 15 min.
