Ingredients
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 cup diced red onion
- 1 can corn, drained
- 1 clove garlic, minced
- 1 tsp cilantro
- 1/4 cup olive oil
- 4-5 tbsp red wine vinegar
- 1 tsp lime juice
- 1 can black beans, drained
- Lettuce leaves and tortilla chips
Preparation
Step 1
Cut all the bell peppers and onion into 1/4 inch dice. Ina a salad bowl, combine bell peppers, onion, corn, garlic and cilantro and toss to mix. Add olive oil, vinegar, lime juice, and salt and pepper to taste and toss again. Add the beans and mix well. Serve over lettuce with chips.
