Ingredients
- 1 medium size onion, diced
- 1 package extra lean ground turkey (I use the 99% fat free one), crumbled
- 2 - 28 oz cans of diced tomatoes (drained, rinsed and squeezed of any excess water)
- 1 can red or black beans, drained and rinsed.
- 2 cans fat free, low sodium beef broth
- 2 zucchini, diced
- 2 yellow squash, diced
- 2 red or green pepper, diced
- 4 celery stalks, diced
- 1 packet chili seasoning
- Crushed red pepper, salt, pepper, etc., to taste (optional)
Preparation
Step 1
Lightly spray large pot and sauté onion, add turkey and brown. Combine all other ingredients and bring to a boil. Simmer until vegetables are soft. I cook down everything for at least a half an hour. There will be a lot of liquid from the vegetables.
