Ingredients
- Glaze:
- 1 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. freshly grated nutmeg
- 1/4 cup butter or margarine
- 1 tbsp. grated lemon rind
- 3/4 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup sugar
- 1 tbsp. fresh lemon juice
Preparation
Step 1
Grease a 9 x 5 loaf pan. Sift together flour, baking powder, salt and nutmeg. Blend butter, lemon rind and sugar; beat in eggs. Add sifted dry ingredients to batter in three parts, alternately with milk. Beat after each addition until smooth. Spoon batter into prepared pan.
Bake at 350 deg. for 60 minutes or until cake tester inserted into centre comes out clean.
Cool 5 minutes. Mix glaze ingredients. Drizzle over top of loaf. Cool thoroughly, then remove from pan.
