Ingredients
- 1 tbsp veg oil
- 4 tbsp plus 1.5 tsp Dijon mustard
- 2 tbsp honey
- 4 boneless skinless chicken breasts
- salt and pepper
- 2 yellow onions, cut into rounds
Preparation
Step 1
Heat a grill pan to medium high. In a small bowl, stir together mustard and honey. Season chicken with salt and pepper. Grill until browned and cooked though, 12-15 minutes, flipping once. Brush with half the honey mustard mix and cook 1 minute. Transfer to a cutting board, let rest 5 minutes covered with foil. Cut into thin slices.
Brush onions with veg oil, season with salt and pepper. Grill until brown and tender, 7-9 minutes, flipping once. Brush with rest of honey mustard mix and cook 1 minute. Serve with sliced chicken.
