Spiced potatoes and onions

Ingredients

  • 1.5 lbs yukon gold potatoes, diced
  • 2 tbsp veg oil
  • 1 large yellow onion, sliced into rings
  • salt and pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp red pepper flakes
  • 6 sprigs cilantro

Preparation

Step 1

Steam potatoes until tender, 12 minutes. Transfer to a paper towel lined plate.
In a large nonstick skillet, heat oil over medium high. Add onion, season with salt and pepper. Cook, stirring, until browned, 12-15 minutes. Add cumin, red pepper flakes and potatoes and cook, stirring, until golden, 5 minutes. Transfer to a platter and top with cilantro.
