Salmon and Aspargus Salad

Ingredients

  • 2 lbs asparagus
  • 2 tblsp + 2 extra teaspoons extra virgin olive oil
  • 4 (6 oz) salmon fillets
  • 2 tbls dijon mustard
  • 1 tblsp white wine vinegar
  • 5 oz spring mix(6 cups)
  • salt and pepper

Preparation

Step 1

Place asparagus in single layer in baking pan, drizzle with 2 tsp oil, season with salt and pepper, and turn to coat. Bake until lightly browned, about 20 minutes.

Season Salmon with salt and pepper. Lightly brush a baking dish iwht oil. Add salmon and bake until fish flakes easily with a fork, 10 to 20 minutes.

Place mustardm vinegar , remaining oil, 1/4 tsp sale and 1/8 tsp pepper in jar with lid. Close tightly and shake vigorously to combine.

Combine greens, and 2 tbls of the dressing in a mixing bowl. Toss to coat, Drizzle remaining dressing over the fish and serve with asparagus and geens.
