My Mom's Apple Pie

Ingredients

  • For the dough:
  • 250 g butter
  • 3 egg yolks
  • 600 g flour
  • 200 ml sour cream
  • a pinch of salt
  • 150 g sugar
  • 1 package baking powder
  • For the filling:
  • 11/2 kg apples
  • 200 g sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla paste

Preparation

Step 1

Preheat the oven to 190°C. Take a quite ordinary baking tray lined with parchment paper.
Grate the apples add sugar and spices and steam it on a medium flame in a pan.
Meanwhile sift the flour onto a clean work surface, add the sugar and baking powder. Using your hands, work the cubes of butter into the flour and sugar by rubbing your thumbs against your fingers until you end up with a fine, crumbly mixture. Add the egg yolks and sour cream to the mixture and gently work it together until you have a ball of dough. You don't have to rest the dough, cut it half, dust your work surface with flour and using also floured rolling pin, roll out making a square like your baking tray's size. Put it on the baking paper. Spoon the apple onto it, then roll out the other half of dough and lay it over the top of the apple filling. Put in the preheated oven bake for about 25-30 minutes, until golden brown. To serve, slice the pie and dust with some confectioner's sugar.
