Lentil, Coconut and Wilted Spinach Soup

A delicious vegetarian concoction delivered to us by our friend Lisa. Good wintertime meal.

Ingredients

  • 1 C Puy lentils
  • 4 C vegetable stock
  • 1 onion, chopped
  • 2 fat cloves of garlic, chopped or minced
  • 2 tsp ground cumin
  • 1 can coconut milk (we used light coconut milk)
  • 2-3 Tbsp soy sauce
  • Spinach or baby spinach
  • Prepared brown rice

Preparation

Step 1

1. Rinse lentils and put in large saucepan. Pour in the vegetable stock, and bring to boil. Boil 10 minutes.

2. Add all remaining ingredients except for spinach and rice. Simmer until lentils are tender, approximately 20-30 minutes.

3. Serve over bowls of brown rice and spinach.
