Brussel Sprouts with Butternut Squash

Ingredients

  • 1/2 cup shallots, halved
  • 2 cups brussel sprouts, leaves separated from hearts
  • 1/2 cup butternut squash or white sweet potato, chopped
  • 1/2 tsp. fresh thyme, chopped
  • 1/2 organic lemon, zest only
  • 1 tbsp. balsamic vinegar
  • 2 tbsp. dried currants
  • 2 tbsp. hemp seeds

Preparation

Step 1

1. Preheat oven to 350 degrees. Wrap shallots in aluminum foil with 2 tbsp. water and bake in preheated oven for 50 minutes.

2. Add a little water to a saucepan and steam brussel sprout hearts and sweet potato or butternut squash for 5 minutes. Add the shallots, thyme, brussel sprout leaves, lemon zest, vinegar and currants. Steam 3 more minutes.

3. Sprinkle hemp seeds over dish to garnish and serve.
