Thai Style Chicken with Basil

Ingredients

  • 2 cups basil, separated
  • 3 cloves garlic
  • 2 tbsp fish sauce, separated
  • 1 tbsp oyster sauce
  • 1 tsp white vinegar
  • 1 tbsp sugar
  • 1 lb chicken breasts
  • 3 shallots
  • 2 tbsp veg oil

Preparation

Step 1

-in small bowl mix 1 tbsp fish sauce, oyster sauce, vinegar, sugar

-combine 1 cup basil, garlic and 1 tbsp of above mix in bowl of food processor and pulse 6 times for 1 sec pulses

-set aside rest of mix

-pulse chicken breast and 1 tbsp fish sauce 10 times to a coarse consistency and refrigerate for 15 min

-in a cold skillet saute shallot in veg oil on medium low,stirring constantly about 7 min; add chicken for 2-4 min

-add reserved basil-fish sauce mix

-finish with 1 cup basil leaves for 30 sec

serve over rice or noodles
