Turkey Apple Brine

Ingredients

  • 1 gallon ice cold water
  • 2 qts apple juice
  • 2 qts orange juice
  • 2 1/2 cups salt
  • 1 cup brown sugar
  • 5 whole cloves
  • 3 whole cinnamon sticks

Preparation

Step 1

Mix all ingredients, except the ice water, together in large pot and stir well. Place on high heat until mixture comes to a boil. Reduce heat and simmer for 15 minutes till sugar is completely dissolved. Set aside and add the ice water and let cool. Remove neck, giblets and liver from turkey cavity and reserve for gravy. Rinse turkey inside and out with cool water. Submerge turkey in brine for at least 4 hour and up to 24 hours.
