Ingredients
- 2 English Cucumbers
- 1/4 Lg. Watermelon
- 1/4 C. Lime Juice (3-4 limes)
- 2/3 C. Mint Leaves, torn
- 2 Tbsp. Tarragon leaves, finely chopped
- 1/2 tsp. Salt
Preparation
Step 1
Slice cucumbers in half lengthwise. Scrape out & discard seeds. Chop cucumber & watermelon into small chunks & place in a lg. bowl. Stir in lime juice, herbs & salt.
*Salad will keep well, covered & refrigerated, up to 2 hrs.
