Ingredients

  • 8 oz Jar Pimientos Drained *SAVE LIQUID*
  • 1 T Flour
  • 1/4 C Sugar
  • 1/4 C Rice Vinegar
  • 1/2 Stick Butter
  • 1 # Sharp Cheddar Cheese Grated

Preparation

Step 1

ROUX:
Small Sauce Pan Medium Heat Melt Butter, Whisk in Flour & Sugar. Add Vinegar & Pimiento Liguid Whisk until Mixed - Roux is Ready When it Falls off Whisk in Wide Ribbon or Sheet.

Allow to Cool.

Large Bowl Add Cheese & Roux, Mix Well with Hands.

Cover & Refrigerate to Chill.

Great on Crackers or as a Sandwich.
