Broccoli and Cauliflower bread pudding

Ingredients

  • 1 16 oz loaf french bread
  • 5 C Fresh Broccoli (about 1 head)
  • 5 C fresh cauliflower
  • 3/4 C minced green onion
  • 4 C shredded muenster cheese divided
  • 2 C whole milk
  • 1 C whipping cream
  • 6 large eggs
  • 1 3/4 tsp salt
  • 1 tsp pepper

Preparation

Step 1

Spray 3 qt baking dish. In large bowl combine bread cubes, broccoli, cauliflower and onions. Spread half mixture in baking dish and sprinkle with 2 cups cheese. Top with remaining mixture and remaining 2 C cheese.

In medium bowl whisk together milk, cream, eggs, salt and pepper. Slowly pour mixture over bread mixture and press down gently with wooden spoon. Cover and refrigerate 2-24 hrs. Remove from refrigerator 30 min before baking.
Bake at 350 35-45 min
