Sweet Potato Casserole

Ingredients

  • Streusel topping:
  • 6 sweet potatoes
  • 1/4 tsp. salt
  • 2 T butter (softened)
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 3/4 tsp. cinnamon
  • 1/3 c sugar
  • 1/4 c cream or half and half
  • 1/2 stick butter (chilled)
  • 1/4 c flour
  • 3/4 c packed brown sugar
  • 1/2 c pecans (optional)

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease 9 x 13 baking dish and set aside. Peel, quarter and boil sweet potatoes for 10-15 minutes of until fork tender. Drain and dry well. Place in bowl and mash. Add the salt, butter, eggs, vanilla, cinnamon, sugar and cream and mix until smooth. Spoon into baking dish and spread evenly.

For the topping, in bowl combine the butter, flour and brown sugar. Mix with a fork to the consistency of coarse mill. Stir in the pecans if using. Sprinkle over the potatoes. bake 30-45 minutes or until the topping is crisp and lightly browned.
