Quino and Bean Sou

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion chopped
  • 1 carrot diced
  • 2 garlic cloves
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/3 cup dry quinoa
  • 2 cups vegetable broth
  • 1 can white kidney beans, drained and rinsed
  • 2 cups baby spinach

Preparation

Step 1

In large saucepan cook onions until soft. About 3 min. Add carrot and garlic cumin coriander and quinoa. Cook 2 more min. Pour in broth and 2 cups water. Bring to a boil, then reduce heat to med low. Simmer parially covered, unti quinoa is cooked, about 15 min

Stir in beans and spinach. Cook until beans are hot.
