Chicken Breasts Stuffed with Apple & Goat Cheese

Ingredients

  • 6 lg chicken breast halves
  • salt & pepper
  • 1 apple, shredded
  • 1/4 cup + 2 tbsp goat cheese
  • 1 tsp grated lemon zest
  • 2 tbsp flour
  • 1 egg
  • 1 tbsp water
  • 1 1/3 cup fine breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 tbsp each of butter and olive oil

Preparation

Step 1

Place chicken on wax paper, cover with another sheet, pound to 1/4 inch thickness, season with salt and pepper on top. Combine apple, cheese & lemon zest in bowl, spread mix over half of each breast, fold over, secure pocket edges with toothpicks. Sprinkle flour on wax papaer, beat egg with 1 tbsp water. Mix bread crumbs and parm cheese in another bowl. Dust breasts with flour, dip into egg mix, coat with crumbs. Heat butter and oil in skillet over med heat, cook 6 min per side, drain on paper towels...
