Red Beans and Rice

Ingredients

  • 1 medium sized onion chopped
  • 1/2 cup green pepper chopped
  • 2 cloves garlic minced
  • 2 T olive oil
  • 1/3 cup parsley
  • 3 cans red beans, rinsed and drained
  • 3/4 cup water
  • 1/2 t salt
  • 1 t ground cumin
  • 1/4 t black pepper
  • 1 lb conech sausage

Preparation

Step 1

1. In a large skillet, saute onion, green pepper and garlic in oil until tender. or wilt the onion pepper and garlic in the microwave for 2 minutes on High. Add conech sausage and brown if desired.

2. Add parsley. Stil in beans, water, salt, cumin and pepper. Transfer to slow cooker.

3. Cover. Cook on low 5-6 hours

4. Serve over cooked rice
