Ingredients
- 2 Tbsp lemon juice
- 1 Tbsp EVOO
- 1 garlic clove, minced
- 1/2 tsp dried oregano, crumbled
- 1/4 tsp pepper
- 3 cups torn romaine
- 1 large tomato cut into wedges
- 1 mini (Persian) cucumber, thinly sliced
- 1 red bell pepper, cut into strips
- 1/2 red onion, thinly sliced
- 6 large pitted black olives, halved
- 1/4 cup lightly packed fresh flat leaf parsley leaves
- 1/4 cup crumbled reduced fat feta
Preparation
Step 1
To make dressing, whisk together lemon juice, oil, garlic, oregano, and pepper.
Toss together remaining ingredients except feta in salad bowl. Drizzle dressing over and toss. Sprinkle with cheese.
