Greek Islands Salad

Ingredients

  • 2 Tbsp lemon juice
  • 1 Tbsp EVOO
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano, crumbled
  • 1/4 tsp pepper
  • 3 cups torn romaine
  • 1 large tomato cut into wedges
  • 1 mini (Persian) cucumber, thinly sliced
  • 1 red bell pepper, cut into strips
  • 1/2 red onion, thinly sliced
  • 6 large pitted black olives, halved
  • 1/4 cup lightly packed fresh flat leaf parsley leaves
  • 1/4 cup crumbled reduced fat feta

Preparation

Step 1

To make dressing, whisk together lemon juice, oil, garlic, oregano, and pepper.
Toss together remaining ingredients except feta in salad bowl. Drizzle dressing over and toss. Sprinkle with cheese.
