Ingredients

  • 8 oz small Shells or Twists
  • 1 cup Frozen Peas
  • 1/3 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 1/2 tsp Black Pepper
  • 2 cloves Garlic
  • 1/4 cup finely chopped Scallions
  • 1 med. Zucchini
  • 1 cup Cherry Tomotoes

Preparation

Step 1

Cook pasta, add peas to pasta for last 3 mins. Drain
In large bowl, combine oil, lemon juice, pepper, garlic & scallions. Wash zucchini. slice thinly.
Wash and slice tomotoes.
Add pasta & peas to dressing.
Toss in zucchini & tomatoes.
Cover & chill at least 2 hrs.
Toss again before serving.
