Ingredients
- 10 cups ground Zucchini
- 4 1/2 cups Sugar
- 5 tbsp Salt
- 1 tbsp Dry Mustard
- 4 cups Onion (finely chopped)
- 1 tbsp Cornstarch
- 2 1/4 cups White Vinegar
- 1 tbsp Nutmeg
- 1 tbsp Turmeric
- 1/2 tsp Black Pepper
- 1 Sweet Green Pepper (finely chopped)
- 1 Sweet Red Pepper (finely chopped)
Preparation
Step 1
Put first three ingredients in large bowl, mix well and let stand overnight. (zucchini, onion,& salt.)
drain and rinse in cold water and drain again. Put in 5 qt.
pot, add all ingredients.
Bring to boil and simmer uncovered
stirring occasionally.
Simmer 30 minutes or until desired consistency, pour into 6-8 sterilized pint jars & seal.
