ZUCCHINI BREAD

Ingredients

  • 3 Eggs
  • 2 cups all purpose Flour
  • 1 cup veg. Oil
  • 1/4 tsp Baking Powder
  • 1 1/2 cup Sugar
  • 1 tsp Baking Soda
  • 2 cups Zucchini (grated & well
  • drained)
  • 3 tsp Cinnamon
  • 1 cup Raisins
  • Salt
  • 1 cup chopped Walnuts
  • 2 tsp Vanilla

Preparation

Step 1

Grate zucchini, sprinkle with salt & allow to rest in colander for 20 mins. Drain well.
Beat eggs in lge. bowl.
Stir in oil, sugar, zucchini and vanilla.
Sift flour, baking powder, baking soda, cinnamon onto wax paper.
Stir in eggs mixture until well blended.
Add raisins & nuts.
Stir well.
Spoon batter into 2 well greased & floured pans.
Bake at 375 deg. for 50 mins. or until tester comes out clean.
Cool in pans on wire rack for 10 mins.
Remove from pans, cool completely. Freezes nicely.
