Ingredients
- 2 15-Ounce Cans Black Beans, drained and rinsed
- 1 Egg
- 1/2 Cup Plain Oatmeal
- 2 Teaspoons Ground Cumin
- 1/2 Teaspoons Cayenne Pepper
- 1/2 Cup Shredded Cheddar Cheese
- 2 Tablespoons Chopped Cilantro
- 1/2 Teaspoon EVOO
- Whole Wheat Buns
Preparation
Step 1
1. In a small food processor or blender, combine 1 can of beans, egg, oatmeal, cumin, and cayenne. Pulse to process until nearly smooth, stirring between pulses as needed with spatula or wooden spoon. Transfer mixture to a large bowl and add remaining beans, cheese and cilantro. Stir well to mix.
2. Divide the mixture in the owl into two equal portions. (This helps to make 4 equal-sized burgers with less guesswork.) Spread oil in the bottom of a large nonstick skillet, or mist lightly with cooking spray.
3. Use a plastic spatula to scoop up half of one portion of burger mixture and place in the pan. Use the spatula to form it into a patty about 4 inches across. Form one more burger, and then repeat this step with the remaining half of the black-bean mixture.
4. Cook over medium heat for 8-10 minutes, turning halfway through, until crisp on both sides. Serve with lettuce, greens, pickles, or other desired toppings.
Per Serving: 280 calories, 7g fat, 37g total carbohydrate, 13g dietary fiber, 17g protein.
Serve on a whole wheat bun for 68g total carbohydrate
