Ingredients

  • 1 red pepper cut into quarters
  • 1 orange pepper cut into quarters
  • 1 green pepper cut into quarters
  • 1 vidalia or red onion cut into 6 slices
  • 8 mushrooms halved
  • 1 tsp olive oil
  • DRESSING
  • 2 tbsp balsamic vinegar
  • 2 tsp olive oil
  • 1 tsp grainy mustard
  • 1 tsp honey
  • 1 small garlic clove crushed

Preparation

Step 1

preheat the barbeque or broiler to medium-high heat.in a large bowl toss the vegetables with 1 tsp olive oil.place vegetables on baking sheet to broil or directly on barbeque.grill or broil until slightly blackened.whisk dressing ingredients together.toss the vegetables and sreve at room temperature.
