Company Carrots

Ingredients

  • 2 pounds carrots, cut in strips
  • 1/2 cup mayonnaise
  • 1 tablespoon minced onion
  • 1 tablespoon prepared horseradish
  • salt and pepper to taste
  • 1/4 cup fine cracker crumbs (approx. 6)
  • 2 tablespoons butter
  • chopped fresh parsley

Preparation

Step 1

Cook carrots until fork tender. Drain, saving 1/4 cup of liquid.

Place carrot strips lengthwise in 9 X 13-inch casserole dish.

Combine carrot juice with mayonnaise, onion, horseradish, salt and pepper. Pour over carrots.

Sprinkle cracker crumbs over the top and dot with butter. Sprinkle with parsley.

Bake, uncovered, at 375 degrees for 15 to 20 minutes.
