Refrigerator Potatoes

Ingredients

  • 5 lb. potatoes
  • 2-3 oz. packages cream cheese
  • 1 pt. sour cream
  • 2 Tsp. onion salt
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbs. butter
  • 1/2 lb. bacon, cooked and crumbled
  • 1 c. grated Cheddar cheese
  • Chives

Preparation

Step 1

Peel and quarter potatoes. Cook in boiling water until very tender. Drain well.
Mash potatoes until smooth. Add cream cheese, sour cream, onion salt, salt ,pepper, butter and bacon. Beat until smooth and fluffy.
At this point potatoes may be covered and refrigerated for a few days or frozen.
When ready to serve, cover with grated cheese and chives. Bake at 350 for 45 minutes.
