Green, rice noodles and chicken salad

I have some allergies concerning food and I don't even know what causes them. I was perfectly fine before. Anyway, now I have to be careful and I avoid gluten, even if it's not the entire cause of my problems. Here's a salad I made on the clock before leaving to take a train with what was left in my fridge, and it was pretty good!
You can also do this the veggie way taking out the chicken.

Ingredients
- 4 tbs of quinoa
- 1 green pepper
- 4 tbs of green peas
- 3 hands full of spinach
- 4 nests of rice noodles (they are usually four of those in the packs we can get around here)
- 2 chicken whites
- 1 onion
- 1 lemon
- Soy sauce
- Coriander
- Pepper
Preparation
Step 1
Steam the peas, spinach, chicken and onion with some pepper and coriander. For the quinoa, either cook it in the micro wave (indications below) or in a pan, depending on how much time you've got. But in the water, add pepper, salt, coriander too and a bouillon cube.
Meanwhile, cut the pepper into small cubes. Then take the rice noodles out of the package but them in another bowl, boil enough water so that they are completely immersed. Cover the bowl with a plate so that the heat does not come out. Leave them for as long as needed. If they are completely white they are done.
Take them out of the water, and put them in a salad bowl, add the quinoa, the green pepper, and everything you've just steamed. Cut the chicken into little pieces.
For the sauce, mix the soy sauce with the lemon juice. The quantities don't matter it only depends on your taste - more soy sauce or more lemon juice.
Add pepper if you want to.

Cooking quinoa in the micro-wave:
Use a bowl large enough (and high enough) that the water will not spill when boiling inside the micro-wave (a real pain to clean).
Put at least one glass of quinoa (a handful can also do the trick) and two or three glasses of water. Add salt, pepper, and one bouillon cube (I usually use chicken cubes, but there are vegetables and beef cubes too).
Put in the micro wave at the highest power for 8 minutes. When this is finished, leave the bowl outside for ten minutes. Once this has passed, put it in again for 2 minutes only. It's ready! (you just have to take the extra water out)
