Tomato, Corn and Pasta Salad

Ingredients

  • 3 ears of corn cut off cob
  • 1 1/2 c. bowtie pasta-uncooked
  • 1/2 c. lima beans
  • 3 scallions, chopped
  • 1/2 pt. cherry tomatoes, halved
  • 1/4 c. fresh tarragon
  • 3 oz. goat cheese
  • 2 Tbs. white wine vinegar
  • 4 Tbs. olive oil
  • 1 clove garlic, minced
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Preparation

Step 1

Cook pasta, drain, and cool.
Combine vinegar, oil, garlic, salt, and pepper for dressing.
Place corn, pasta, beans, scallions, tomatoes, and tarragon in a large bowl.
Toss with dressing.
Sprinkle with goat cheese.
Serve at room temperature.
