Ingredients
- 3 ears of corn cut off cob
- 1 1/2 c. bowtie pasta-uncooked
- 1/2 c. lima beans
- 3 scallions, chopped
- 1/2 pt. cherry tomatoes, halved
- 1/4 c. fresh tarragon
- 3 oz. goat cheese
- 2 Tbs. white wine vinegar
- 4 Tbs. olive oil
- 1 clove garlic, minced
- 1/8 tsp. salt
- 1/8 tsp. pepper
Preparation
Step 1
Cook pasta, drain, and cool.
Combine vinegar, oil, garlic, salt, and pepper for dressing.
Place corn, pasta, beans, scallions, tomatoes, and tarragon in a large bowl.
Toss with dressing.
Sprinkle with goat cheese.
Serve at room temperature.
