Creamy Broccoli Soup

Ingredients

  • 1/4 c chopped onions
  • 1 T butter
  • 1 T flour
  • 2 c milk
  • 4 oz. cream cheese (cubed)
  • 1/2 lb. Velveeta cheese (cubed)
  • 1 package frozen chopped broccoli (cooked & drained)
  • 1/4 tsp. nutmeg
  • 1/8 tsp pepper

Preparation

Step 1

Cook and stir onions in butter until tender crisp. Whisk in flour until well blended. Add milk, and cook and stir for 2 minutes. Stir occasionally. Add cream cheese and cook and stir 2 minutes or until melted. Stir in remaining ingredients. Cook 5 minutes or until heated through, stirring occasionally.
