Stuffed Zucchini

Ingredients

  • 1 zucchini, washed
  • 1 garlic clove, minced (or from a jar)
  • 2 tsp. grated Parmesan cheese
  • 4 tb. Italian style breadcrumbs

Preparation

Step 1

Preheat oven to 350.

Cut off knobby ends and cook whole zucchini in boiling water for 10 minutes.

Cut in half crosswise, then lengthwise. Scoop out insides with spoon to create 4 "boats".

Add garlic to breadcrumbs. Stir together.

Add zucchini pulp into breadcrumb mixture.

Fill zucchini shells with mixture. Top with grated Parmesan cheese.

Bake for 15 minutes at 350. Cool before serving.
