Broccoli Soup

Idea for left over mashed potatoes

Ingredients

  • 1 quart chicken broth
  • 1 10 oz. frozen broccoli (thawed)
  • 2 c mashed potatoes
  • 1/8 tsp. pepper
  • 2 c shredded Cheddar cheese

Preparation

Step 1

In blender puree broth and broccoli. Transfer to 4 qt. pot and heat to boiling. Whisk in potatoes and pepper. Simmer on low heat 10 minutes. Stir in cheese.
