Ingredients
- 2 half chicken breasts, skinned and boned
- 1 tablespoon vegetable oil Crisp lettuce leaves
- 1 small cucumber, sliced
- 1 orange, peeled and sliced
- 2 clusters seedless grapes
- 1/2 red bell pepper, sliced
- 1 banana, peeled and sliced
- Peanut dressing
- 1/4 cup orange juice
- 2 tablespoons peanut butter
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon grated ginger root
- 1/2 teaspoon garlic powder 1/8 teaspoon crushed red pepper flakes
Preparation
Step 1
Combine all dressing ingredient
Marinate chicken in 2 tablespoons dressing for 30 minutes. Salt and pepper the chicken to taste.
Sauté chicken in hot oil until done.
Line 2 salad plates lettuce. Arrange chicken on lettuce. Surround with cucumber, orange slices, grapes, red pep- per and sliced banana. Serve with peanut dressing.
Makes two servings.
