Thyme Roasted Turkey Breast

Ingredients

  • 1 bone-in whole turkey breast (4 1/4-5 lbs), thawed
  • 1/2 cup apple juice or dry white wine
  • 2 Tbsp chopped fresh or 1 1/2 tsp dried thyme leaves
  • 1 tsp paprika
  • 1/2 tsp salt
  • 2 cloves garlic, finely chopped

Preparation

Step 1

1) Heat oven to 325.
2) On rack in large shallow roasting pan, place turkey breast, skin side up.
3) Insert overproof meat thermometer so tip is in the thickest part of the breast and does not touch bone.
4) Roast uncovered 30 minutes. Meanwhile, in small bowl, mix remaining ingredients.
5) Brush 1/3 of apple juice mixture over turkey. Roast 1 hour to 1.5 hours longer, brushing generously with apple juice mixture every 30 minutes, until thermometer reads 170 degrees.
6) Remove turkey from oven; cover with foil to keep warm. Let stand 15 minutes for easiest carving.
