Ginny's potato salad

Ingredients

  • 5 pounds potatoes
  • 1 dozen eggs
  • 1 pound bacon
  • mayo
  • mustard
  • salt, pepper onion powder

Preparation

Step 1

hard boil eggs
peel and chop down to bite size pieces
allow to cool to room temperature
chop the bacon into small pieces and cook completely
remove from grease and allow to cool to room temperature
peel and dice potatoes to bite size pieces
add a small handful of salt to the boiling water to flavor potatoes
once cooked strain and run cold water over potatoes to stop cooking process
in a large bowl add potatoes eggs and bacon
add about 2 cups mayonnaise and 1/2 cup of mustard to start
add more mayonnasie and mustard as needed
add salt, pepper and onion powder to taste
refregerate a few hours before serving
over night is better
