Ingredients
- 1/2 sheet puff pastry (1/4 of a 17.3 oz pkg)
- 1 cup grape or cherry tomatoes (halved if large)
- 1 cup grated mozzarella
- 1 T. olive oil
- 1/2 tsp kosher salt & fresh ground pepper
Preparation
Step 1
Heat oven to 425. On a lightly floured surface, roll puff pastry into a 9 by 6 inch rectangle. Place on a parchment lined baking sheet & refrigerate until firm, at least 30 minutes. Prick all over w/a fork & top w/tomatoes & cheese. drizzle w/olive oil & sprinkle w/salt & pepper. Bakes until golden brown, about 20-25 minutes.
