Roasted Garlic Zucchini Leek Soup

Ingredients

  • 1 garlic head, whole
  • 4 leeks
  • 4 white onions
  • 2 cloves garlic
  • 6 zucchini, peeled and chunked
  • 3 tbsp. chicken soup mix
  • 3 tbsp. vegetable soup mix
  • salt and pepper to taste

Preparation

Step 1

1. Slice of top of whole garlic head. Place on a piece of silver foil and drizzle with 2 tbsp. olive oil. Close foil around the garlic well. Bake at 325 for an hour. Allow to cool. Squeeze out garlic, set aside.
2. Saute leeks, onion, and garlic for 7 minutes.
3. Add zucchini, water, and spices. Bring to a boil. Lower heat and simmer for 1 hour.
4. Add garlic to pot, puree leaving some whole pieces.
