Ingredients
- 1 C quinoa, rinsed
- 3 C strawberries, halved
- 1 cucumber, peeled, seeded and diced
- 1/2 C low fat sesame ginger salad dressing
- 1 5oz pkg baby arugula salad blend
Preparation
Step 1
Cook quinoa according to package directions. Transfer to large bowl and let cool completely.- about 20 minutes. Stir in strawberries, cucumber and 1/2 of the salad dressing (1/4 C). Combine salad blend and remaining dressing - toss this to coat the greens. Divide the greens among 4 plates and then top evenly with the strawberry quinoa mixture. Should equal 2 1/4 cups per serving.
