Golden Meatball Casserole

Ingredients

  • 1 pound ground beef
  • 1/2 cup fresh bread crumbs
  • 1 egg
  • 1 tsp salt
  • All purpose oil
  • 2 cups water
  • 1 cup uncooked rice
  • 2 large carrots, cut in quarters
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/2 pound Velveeta, cubed

Preparation

Step 1

Combine meat, bread crumbs, egg, and salt; mix lightly. Shape into 18 meatballs; brown in small amount of oil on all sides in large skillet. Drain. Add water, rice, carrots, green pepper and onion. Cover and simmer 25 minutes. add Velveeta; heat until Velveeta melts.

4 to 6 servings.
