Ingredients
- 2 or 3 lbs. fresh green beans, trimmed and cut
- water to cover, about 3 to 4 cups
- 1 C sliced fresh mushrooms
- 1/3 C chopped onion
- 1 8 oz. can sliced water chestnuts, drained
- 1/2 t salt
- 1/2 t pepper
- 1/2 t basil
- 1 t dried Italian seasoning
- 1/3 C olive oil
- 1/4 C grated Parmesan cheese
Preparation
Step 1
Combine green beans and water in Dutch oven. Bring to a boil. Cover, reduce heat, and simmer for about 8 to 10 minutes, until tender but still a bit crisp. Drain. Plunge into ice water to stop the cooking process. Drain beans and set aside.
Combine mushrooms, onion, water chestnuts, salt, pepper, bail, and Italian seasoning and oil in a Dutch oven saute until onion is tender. Stir in beans and cook until thoroughly heated. Sprinkle with Parmesan cheese.
