Spicy Thai Glaze

Ingredients

  • 1 T vegetable oil
  • 5 garlic cloves, minced
  • 1/2 c onion, finely minced
  • 1/2 T crushed red pepper
  • 1 c honey
  • 1/2 c cider vinegar
  • 1/2 c apple juice
  • 1 lime, zest and juice
  • 1/2 t thyme leaves
  • 1/2 t sea salt
  • 1 bay leaf
  • 1 lb shrimp, chicken or pork
  • 1 mango
  • cilantro
  • rice

Preparation

Step 1

1. Heat oil in skillet. Add garlic, onion and crushed red pepper. Cook 3-4 mins until vegetables are tender.

2. Mix together honey, vinegar, apple juice, lime zest, lime juice, thyme leaves, sea salt, and bay leaf.

3. Pour into skillet. Bring to a boil and cook until sauce is reduced to thick syrup, about 20-25 mins. Remove from heat and strain.

4. Brush glaze over shrimp, chicken or pork while cooking. Try adding mango and cilantro. Try drizzling extra glaze over rice.
