Rhubarb Squares

Ingredients

  • Crust:
  • 4 C diced rhubarb
  • 1 C sugar
  • 3 T cornstarch
  • 1 c water
  • 1 C flour
  • 3/4 C oatmeal
  • 1 C brown sugar
  • 1/4 t salt
  • 1 C melted butter

Preparation

Step 1

Mix ingredients for crust and press 2/3rd into 9 X 13" pan. Cook sugar, cornstarch and water. Bring to boil until thick and clear. Add drop of red food coloring. Place rhubarb on crust. Pour hot mix over rhubarb and sprinkle remainder of crust mix over top evenly. Bake 45-50" @ 350. Test after 30".
