Ingredients
- 1 tbsp. oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/4 tsp cinnamon
- 1/4 cup all-purpose flour
- 1 cup vegetable stock
- 3 sweet potatoes, peeled and cubed
- 1 X 28oz can diced tomatoes
- 1 can red kidney beans, drained and rinsed
- 1 green pepper, diced
- salt and pepper to taste
Preparation
Step 1
In large saucepan, heat oil over med. heat and cook onion for 2 min. Add garlic and spices and cook for 3 mins, or until softened. Sprinkle with flour and cook, stirring for 1 min. Add stock and stir until smooth. Add sweet potatoes and tomatoes and bring to a boil. Reduce heat, cover and simmer. Stir occasionally for 20 mins. or until almost tender. Add beans and green pepper and simmer uncovered for about 10 mins. or until sweet potatoes are tender and chili is slightly thickened. Add salt and pepper to taste.
