Cheese Potato Puff

Ingredients

  • 12 medium potatoes, peeled and cubed
  • 2 c cheddar or Swiss cheese
  • 1-1/4 c milk
  • 1/3 c softened butter
  • 1/2 c sour cream
  • 1-2 t salt
  • 2 eggs beaten

Preparation

Step 1

Place potatoes in water; cook until tender 15-20 minutes. Drain and mash. Add cheese, butter, salt and sour cream until melted. Fold in eggs. Spread into a greased 9x13 pan. Bake 350 for 25-30 minutes.
