Broccoli Salad

Ingredients

  • 2 large stalks of broccoli. (about 5 cups flowerettes)
  • 1/2 lb chopped bacon
  • 1/4 cup chopped onion
  • 3/4 cup mayonnaise
  • 1 1/2 Tbsp lemon juice
  • 1 Tbsp sugar substitute
  • 2 Tbsp dried currants
  • 1/4 cup sunflower seeds
  • salt and pepper to taste

Preparation

Step 1

1. Blanch broccoli by boiling it or microwave for 1-2 minutes. cool it quickly in ice water or under cold tap water.

2..for dressing: mix mayonnaise, lemon juice, sweetener, salt and pepper. add onion and currants.

3. mix broccoli, dressing, and remaining ingredients together
