Pesto Turkey and Pasta

Ingredients

  • 3 cups uncooked farfalle (bow-tie) pasta
  • 2 cups cubed cooked turkey breasts
  • 1/2 cup basil pesto
  • 1/2 cup coarsely chopped roasted red bell peppers
  • sliced ripe olives, for garnish if desired

Preparation

Step 1

Cook and drain pasta as directed on package in a 3-quart saucepan. Mix hot cooked pasta, turkey, pesto and bell peppers in same saucepan. Heat over low heat, stirring constantly, until hot. Garnish with olives, if desired.

Tips: Roasted red peppers in small jars can be found near the pickles, olives and relishes in the supermarket. Pesto comes in a variety of flavors and is found in the refrigerated section or condiment section of the supermarket. Make this even more special and top off this tasty pasta dish with grated Parmesan cheese and crushed red pepper!
