Great Aunt Sophie's Stuffed Mushrooms

The whole family requests these every Christmas Eve. They always disappear as soon as I put them out!

Ingredients

  • 1/2 lb. ground sausage
  • 1 lb. large crimini mushrooms
  • 1 1/2 c. soft bread crumbs
  • 2 Tbsp. chopped parsley
  • 2 Tbsp. mayonnaise (add more if needed)
  • 3 Tbsp. melted butter

Preparation

Step 1

In a large saute pan, brown and drain sausage. Remove and chop mushroom stems and add to sausage over medium heat until most of the liquid from the mushrooms evaporates. Remove from heat and add breadcrumbs, parsley and mayonnaise. Brush tops of mushrooms and put in shallow pan. Broil 2 mins. Invert mushrooms and fill with sausage mixture. Broil 3 mins more.
